Pate appetizer recipe with ham and leeks

How to make your own homemade pate using ham, leeks, onion, cream cheese, colby cheese, eggs and spices. The recipe is great for adult cocktail party appetizers, and also a fun way to lead into a complex family meal. This finger food serves 4.

INGREDIENTS:

6 oz. canned ham, drained and cut into chunks

6 oz. cream cheese

1 cup sour cream

1/4 lb. cooked leeks, cut into thick chunks

1 oz. butter, softened

2 cups Colby cheese, cut into chunks

1 red onion, cut into wedges

2 eggs, hard boiled

1 tsp. salt

1 tsp. black pepper

1 tbsp. fresh thyme, leaves only

METHOD:

Using a food processor, blend ham, cream cheese, sour cream, leeks, butter, Colby cheese, red onion, eggs, salt, black pepper and thyme. Mix until smooth. Chill for 1 hour and serve cold in a bowl with crudites, crackers and potato chips.
